Bacon Topped Meat Loaf

Meatloaf prepared from lean ground beef combined with mixture of chili sauce, eggs, Worcestershire sauce, chopped white onion, shredded cheddar cheese, dry bread crumbs, sea salt and fresh ground black pepper. Loaf is topped with bacon and baked in hot oven about an hour and 15 minutes until meat is cooked through and outside is firm and crispy.

Ingredients -

1/2 cup Chili Sauce
2 Large Eggs, lightly beaten
1 tablespoon Worcestershire Sauce
1 medium White Onion, chopped
1 cup Cheddar Cheese, shredded
2/3 cup Dry Bread Crumbs
1/2 teaspoon Sea Salt
1/4 teaspoon Fresh Ground Black Pepper
2 pounds Lean Ground Beef
2 Bacon Slices, halved

 
Preparation:

1. Combine the chili sauce, eggs, Worcestershire sauce, onion, cheese, bread crumbs, salt and pepper in a medium bowl.

2. Crumble the beef over the mixture and mix well.

3. Shape into a loaf in an ungreased 13-in. x 9-in. x 2-in. baking dish.

4. Top with bacon.

5. Bake, uncovered, at 350 degrees F for 70-80 minutes or until meat is no longer pink and a meat thermometer reads 160 degrees F.

6. Drain.

7. Let stand for 10 minutes before cutting.

 



Ground Beef Recipe Tip -
Reduce the Fat
You can further reduce the fat content by rinsing ground beef in hot water after it has been browned and crumbled. Place browned beef in a colander or strainer and rinse. Place on paper towels to dry. The technique will reduce the fat content but much of the flavor will be reduced as well. Not really recommended, this is ok for recipes where the beef isn’t the star of the recipe or when you want to save a little money and purchase ground beef that has a high fat content.

Ground Beef after Cooking
Ground beef reduces in volume as it cooks because the fat turns to liquid and is drained off. High fat ground meat will reduce down a good deal more than low fat ground meat. Higher fat content usually means more flavor, so there will usually be a trade off. Think about your recipe and what role the meat plays.
