1. Preheat oven to 450 F.
2. Lightly grease 13 x 9-inch baking dish.
3. In medium bowl, combine corn muffin mix, water, eggs and chili powder.
4. Stir in beef, mild salsa, 1 cup shredded cheddar cheese and corn.
5. Place into prepared baking dish.
6. Bake 20 minutes, top with remaining cheddar cheese.
7. Bake additional 5 minutes.
8. Let stand for 10 minutes before serving.
9. Serve over lettuce. |
