Beef Tamale Squares

Mexican style casserole with Corn muffin mix, water, eggs and chili powder combined with beef, mild salsa, cheddar cheese and corn. Topped with cheddar and baked golden brown.
Ingredients -
1 (8.5 ounces) Package Corn Muffin Mix
1 1/2 cups Water
2 Large Eggs
1 tablespoon Chili Powder
1/2 pound Ground Beef, cooked and drained
2 cups Salsa, mild
2 cups shredded Cheddar Cheese, divided use
1 cup Frozen Corn, thawed
1 cup shredded Iceberg Lettuce
 
Preparation:

1. Preheat oven to 450 F.

2. Lightly grease 13 x 9-inch baking dish.

3. In medium bowl, combine corn muffin mix, water, eggs and chili powder.

4. Stir in beef, mild salsa, 1 cup shredded cheddar cheese and corn.

5. Place into prepared baking dish.

6. Bake 20 minutes, top with remaining cheddar cheese.

7. Bake additional 5 minutes.

8. Let stand for 10 minutes before serving.

9. Serve over lettuce.

Diced Pepper
For a little extra heat, add a tiny amount of finely diced jalapeno or serrano pepper.
