Chili Con Carne With Tomatoes

Sauteed beef, onion, and green pepper combined with tomatoes, kidney beans chili powder, and cayenne.
Ingredients -
1 pound Ground Beef
2 medium Onions, chopped (about 1 cup)
1 cup chopped Green Pepper
1 can (28 ounces) Tomatoes
1 can (8 ounces) Tomato Sauce
2 teaspoons Chili Powder
1 teaspoon Salt
1/8 teaspoon Cayenne Red Pepper
1/8 teaspoon Paprika
1 can (15 1/2 ounces) Kidney Beans, drained
 
Preparation:

1. Brown ground beef with onion and green pepper. Cook until ground beef is no longer pink. Drain off excess fat.

2. Stir in tomatoes, tomato sauce, chili powder, salt, cayenne pepper, and paprika.

3. Bring to a gentle boil. Reduce heat, cover, and simmer 2 hours.

4. Stir occasionally.

5. Stir in kidney beans, and cook until heated through.

You could certainly substitute dry kidney beans that have been re-hydrated in place of canned kidney beans.

Cooking Ground Beef
Cooking ground beef reduces fat to liquid, which is generally drained off. The leaner the ground beef before you start cooking the less volume loss.
