Chili with Sirloin, Garlic and Tomatoes

Lean ground sirloin, green chilies, minced garlic, chopped green bell pepper, minced jalapeno chili pepper, diced white onion, chili powder, dried oregano, and ground cumin are sautéed in olive oil. Diced tomatoes, tomato sauce, kidney beans and pinto beans are added and chili is simmered to blend flavors and heat through.

Ingredients -

2 tablespoons Extra Virgin Olive Oil
1 pound Lean Ground Sirloin
1 (15 ounces) can Green Chilies
6 Garlic Cloves, minced
1 Green Bell Pepper, chopped
1 Jalapeno or Serrano Pepper, stemmed and finely minced
1 large White Onion, diced
3 tablespoons Chili Powder
3 teaspoons Dried Oregano
2-1/2 tablespoons Ground Cumin
1 (28 ounces) can Diced Tomatoes
1 (15 ounces) can Tomato Sauce
1 (15 ounces) can Kidney Beans, drained
1 (15 ounces) can Pinto Beans, drained

 
Preparation:

1. Add olive oil to large stockpot. Heat oil over medium high heat.

2. Add ground sirloin and sauté until brown. Use wooden spoon to stir and break up clumps.

3. Stir in green chilies, minced garlic, chopped bell pepper, minced jalapeno, and diced onion.

4. Sauté approximately 4 minutes.

5. Stir in chili powder, dried oregano, and ground cumin.

6. Stir in diced tomatoes and tomato sauce.

7. Reduce heat to low. Simmer 15 minutes.

8. Add a few tablespoons of cold water, if necessary.

9. Stir in kidney beans and pinto beans.

10. Simmer 20 minutes. Serve hot.

Browning Ground Beef
Brown ground beef at low temperature when possible. The lower temperature results in less shrinkage and a greater volume of beef after browning. A little more of the fat remains in the beef and as a result the beef is more flavorful.

Lean Ground Beef
Leaner ground beef is good when adding it to recipes. Putting lean ground beef in chili, sauce, sloppy joes, and tacos can add protein without a lot of the extra fat.
