Chilies Rellenos Casserole

Mexican style casserole. Green chilies topped with ground beef and onions. Topped with egg, milk, flour, salt, and pepper mixture and baked until golden brown and set.
Ingredients -
7 ounces can Whole Green Chilies
1 1/2 cups (6 ounces) shredded Monterey Jack Cheese
3/4 pound Ground Beef
1/4 cup chopped Onion
1 cup Milk
4 Eggs
1/4 cup All-Purpose Flour
1/4 teaspoon Salt
1/8 teaspoon Pepper
 
Preparation:

1. Preheat oven to 350 F.

2. Split whole green chilies and remove seeds. Dry on paper towels.

3. Arrange chilies on bottom of greased 13 x 9-inch baking dish. Top with Monterrey Jack cheese.

4. In large skillet brown beef and onions. Drain off all excess fat.

5. Spoon meat mixture over cheese.

6. In mixing bowl, beat eggs with milk, flour, salt, and pepper. When mixture is smooth, pour over meat mixture.

7. Bake, uncovered, for 45 to 50 minutes or until a knife inserted near center comes out clean.

8. Allow cooling 5 minutes before serving.

 




Ground Beef Recipe Tip -
Whole Green Chilies
Add additional green chilies or some finely diced serrano or jalapeno chile pepper for extra heat.

Browning Ground Beef
Cook ground beef over low to medium heat when browning to avoid overcooking and dry tasteless meat.
