1. Preheat oven to 350 F.
2. Split whole green chilies and remove seeds. Dry on paper towels.
3. Arrange chilies on bottom of greased 13 x 9-inch baking dish. Top with Monterrey Jack cheese.
4. In large skillet brown beef and onions. Drain off all excess fat.
5. Spoon meat mixture over cheese.
6. In mixing bowl, beat eggs with milk, flour, salt, and pepper. When mixture is smooth, pour over meat mixture.
7. Bake, uncovered, for 45 to 50 minutes or until a knife inserted near center comes out clean.
8. Allow cooling 5 minutes before serving. |
