Cottage Cheese Meat Loaf

The addition of cottage cheese makes the meatloaf deliciously moist. Lean ground beef is combined with small curd cottage cheese, egg, ketchup, chopped yellow onion, prepared mustard, quick cooking oats, sea salt and fresh ground black pepper. Meatloaf is sprinkled with parmesan cheese and baked in hot oven until ground beef is cooked through and outside has browned.

Ingredients -

1 cup Small Curd Cottage Cheese
1 Large Egg, lightly beaten
1/4 cup Ketchup
2 tablespoons Yellow Onion, chopped
1 tablespoon Prepared Mustard
1/2 cup Quick-Cooking Oats
1 teaspoon Sea Salt
1/8 teaspoon Fresh Ground Black Pepper
1 pound Lean Ground Beef
1/3 cup Fresh Parmesan Cheese, grated

 
Preparation:

1. Combine the cottage cheese, egg, ketchup, onion, mustard, oats, salt and pepper in a bowl.

2. Add the beef and mix well.

3. Press into an ungreased 8-in. square baking pan.

4. Bake at 350 degrees F for 20 minutes.

5. Sprinkle with Parmesan cheese and bake 10-15 minutes longer or until the ground beef is no longer pink.

6. Drain.

7. Let stand 10 minutes before cutting.

Greasing the Pan When Frying
When preparing burgers on a stovetop, it is probably not necessary to grease the pan. Most ground beef has enough natural fat to adequately lubricate the pan and keep the patties from sticking. The exception would be the leanest meat.

Substituting with Ground Poultry
When substituting ground poultry for ground beef, keep in mind the two meats have different textures and makeup. Pay careful attention to the ground poultry you purchase as the fat levels can vary just as much as those found in ground beef. Ground white chicken meat is virtually fat free and cooks very dry, whereas some ground turkey is very fatty.
