Cranberry Meat Loaf

Meat loaf with a tangy cranberry sauce. Ground beef combined with egg, beef broth, soft bread crumbs, and onion soup mix. Cranberry sauce prepared on stovetop from whole berry cranberry sauce, sauerkraut, chili sauce, water and brown sugar. Sauce is spread over meatloaf and baked in hot oven until cooked through and browned on outside.

Ingredients -

3 Large Eggs
1/2 cup Beef Broth
1-1/2 cups Soft Bread Crumbs
1 envelope Onion Soup Mix
3 pounds Lean Ground Beef

Sauce:
1 (16 ounces) can Whole Berry Cranberry Sauce
1 (14 ounces) can Sauerkraut, rinsed, drained and chopped
1 (12 ounces) bottle Chili Sauce
1-1/3 cups Water
1/2 cup Packed Brown Sugar

 
Preparation:

1. Combine the eggs, broth, bread crumbs and onion soup mix.

2. Crumble the beef over the mixture and mix well.

3. Shape the beef into a loaf in a greased 13-in. x 9-in. x 2-in. baking dish.

4. In a saucepan, combine the sauce ingredients.

5. Bring to a boil and reduce the heat.

6. Simmer, uncovered, for 5 minutes.

7. Pour over the meat loaf.

8. Bake, uncovered, at 350 degrees F for 1-1/4 hours or until the meat is no longer pink and a meat thermometer reads 160 degrees.

Ground Beef
Ground beef can range in fat content from just below 10% up to 30%. The best burgers are made from meat containing larger percentages of fat as that is where most of the flavor is, and the texture is desirable. Lower fat content ground meats, when cooked, will generally have a drier texture unless liquids have been introduced. Burgers made from lower fat content are drier unless prepared to now more than medium rare.

Ground Chuck
Ground chuck ranges in fat content from 15% to 27%. Ground chuck makes excellent hamburgers, supplying enough fat to provide excellent flavor, moisture and texture.
