Curry Meat Loaf

Ground beef combined with egg, soft bread crumbs, and dry Italian salad dressing mix. Meatloaf is stuffed with mixture of crushed seasoned stuffing, finely chopped celery, mayonnaise, water and curry powder. Stuffed meatloaf is topped with apricot preserves and baked in hot oven until meat is cooked through and outside is crispy brown.

Ingredients -

2 Large Eggs
1/2 cup Soft Bread Crumbs
1 envelope Italian Salad Dressing Mix
1-1/2 pounds Lean Ground Beef
2 cups Crushed Seasoned Stuffing
1/2 cup finely chopped Celery
1/2 cup Mayonnaise
1/2 cup Boiling Water
1 teaspoon Curry Powder
1/2 cup Apricot Preserves

 
Preparation:

1. Combine the eggs, bread crumbs and salad dressing mix in a medium bowl.

2. Crumble the beef over the mixture and mix well.

3. On a large piece of heavy-duty foil, pat the beef mixture into a 10-in. x 8-in. rectangle.

4. Combine the stuffing mix, celery, mayonnaise, water and curry powder.

5. Spoon stuffing mixture down the center of the rectangle.

6. Bring the long sides over the stuffing mixture, peeling the foil away while folding.

7. Seal the edge and ends.

8. Place the seam side down in a greased 13-in. x 9-in. x 2-in. baking pan.

9. Bake, uncovered, at 350 degrees for 45 minutes.

10. In a small saucepan, heat preserves; stir to break up pieces of fruit.

11. Spread the fruit over the meat loaf.

12. Bake for 10-15 minutes longer or until the meat is no longer pink and a meat thermometer reads 160 degrees.

Substituting with Ground Poultry
Substituting ground poultry like turkey or chicken for beef may require you to add a little more seasoning as the ground poultry probably has less natural flavor than ground beef.
