1. Heat oven to 375 F.
2. Coat 13 x 9-inch casserole dish with non-stick cooking spray.
3. Bring lightly salted water to boil in large saucepan. Cook pasta until al dente (check package instructions for amount of cooking time). Drain pasta.
4. Heat skillet over medium heat. Add ground beef and brown. Break beef up with wooden spoon. Brown until no longer pink. Drain off excess fat.
5. Add diced tomatoes, green pepper, cinnamon, salt and pepper. Simmer uncovered 5 minutes until liquid evaporates.
6. Remove from heat.
7. Spread ½ pasta evenly over bottom of casserole dish.
8. Spoon meat mixture over pasta. Cover the meat with the remaining pasta.
9. In a medium bowl, whisk eggs until blended.
10. Stir in Alfredo sauce and nutmeg.
11. Pour egg mixture over pasta.
12. Sprinkle top with the Parmesan.
13. Bake 30 minutes or until mixture is bubbly and top is golden brown.
14. Let casserole stand 15 minutes before serving. |
