Firemen's Meat Loaf

Cornbread stuffing prepared and combined with egg, mushroom pieces, garlic powder and lean ground beef. Meatloaf is shaped and baked in hot oven until ground beef is cooked through. Dish is topped with chilies, salsa and shredded cheddar cheese and returned to the oven to melt cheese. Served hot.

Ingredients -

1 (6 ounces) package Corn Bread Stuffing Mix
2 Medium Eggs, beaten
1 (4 ounces) can Mushroom Stems and Pieces, drained
2 teaspoons Garlic Powder
3 pounds Lean Ground Beef
2 (4 ounces each) cans Green Chilies, chopped 
1/4 cup shredded Cheddar Cheese
1/4 cup Salsa

 
Preparation:

1. In a large bowl, prepare the corn bread stuffing according to package directions.

2. Add eggs, mushrooms and garlic powder.

3. Crumble beef over mixture and mix well.

4. Shape into a loaf in a greased 13-in. x 9-in. x 2-in. baking dish.

5. Bake, uncovered, at 350 degrees F for 1-1/4 hours.

6. Drain.

7. Top with the chilies.

8. Cover and bake for 20 minutes longer or until the beef is no longer pink and a meat thermometer reads 160 degrees F.

9. Sprinkle with the cheese and top with the salsa.

10. Bake, uncovered, for 5-10 minutes or until the cheese is melted.
