Mexican Casserole

Crockpot casserole. Sauteed ground beef and onions with mushroom soup, tomatoes and chilies spooned over tortilla chips and slow cooked.
Ingredients -
1 pound Ground Beef
3 cups Corn Chips, divided
1 medium Onion, chopped
1 (10 ounces) can Cream of Mushroom Soup
1 (10 ounces) can Tomatoes and Green Chilies (Ro-tel)
2 cups Grated Cheese (any kind)
Corn Tortilla Chips
 
Preparation:

1. Add ground beef to large skillet. Brown over medium heat until no longer pink. Break up with wooden spoon.

2. Stir in mushroom soup, tomatoes and chilies.

3. Line bottom of crockpot with 1-cup corn chips.

4. Layer 1/3 of onion, sprinkle with 1/3 of grated cheese and layer 1/3 of meat mixture

5. Repeat layers.

6. Cover and cook on LOW for 6-8 hours.

Salted or unsalted chips both work fine for this mexican casserole recipe.
