Mozzarella Meat Loaf

Jelly roll style meatloaf prepared from lean ground beef, dry bread crumbs, egg, instant minced onion, sea salt and leaf oregano, tomato sauce, mozzarella cheese and sliced mushrooms.

Ingredients -

1-1/2 Pounds Lean Ground Beef
1/2 cup Dry Bread Crumbs
1 Large Egg, beaten
1 teaspoon Instant Minced Onion
3/4 teaspoon Sea Salt
1/2 teaspoon Leaf Oregano
1 (8 ounces) can Tomato Sauce, divided
1-1/2 Cups Mozzarella Cheese
1 (6 ounces) can Sliced Mushrooms, drained

 
Preparation:

1. Combine the beef, crumbs, egg, onion, salt and oregano in a large bowl.

2. Stir in 3/4 cup tomato sauce and set aside.

3. Cut 2 pieces of waxed paper 15 inches long.

4. Place the meat mixture in the center of one rectangle.

5. Cover with second rectangle.

6. With a rolling pin, press the meat into a 13-in. x 9-in. rectangle.

7. Remove the top sheet of wax paper.

8. Sprinkle the meat with the cheese and mushrooms.

9. Top with the remaining tomato sauce.

10. Roll up the meat in the jelly-roll fashion, starting at narrow end; use wax paper to help.

11. Place the meat seam side down and seal the ends securely.

12. Place them in non-stick 9-1/4-in. x 5-1/2 in. x 2-3/4-in. bread pan.

13. Bake at 375 degrees for 30 minutes.

14. Drain off any fat that accumulates; return to oven for 30 more minutes.

Keep Cold until Ready to Use
Most recipes should be prepared with the meat having just come from cold storage. It is not necessary in most cases to ever bring meat to room temperature before cooking.
