1. Combine the beef, crumbs, egg, onion, salt and oregano in a large bowl.
2. Stir in 3/4 cup tomato sauce and set aside.
3. Cut 2 pieces of waxed paper 15 inches long.
4. Place the meat mixture in the center of one rectangle.
5. Cover with second rectangle.
6. With a rolling pin, press the meat into a 13-in. x 9-in. rectangle.
7. Remove the top sheet of wax paper.
8. Sprinkle the meat with the cheese and mushrooms.
9. Top with the remaining tomato sauce.
10. Roll up the meat in the jelly-roll fashion, starting at narrow end; use wax paper to help.
11. Place the meat seam side down and seal the ends securely.
12. Place them in non-stick 9-1/4-in. x 5-1/2 in. x 2-3/4-in. bread pan.
13. Bake at 375 degrees for 30 minutes.
14. Drain off any fat that accumulates; return to oven for 30 more minutes. |
